December 10, 2009

Beginning the week of 12/14, I'll be able to begin taking applications from people interested in working at Pastiche. You can stop by the restaurant or send me a resume via the website email if that's more convenient. We're looking for 4 or 5 waiters/waitresses, 1 or 2 bartenders, 1 or 2 cooks and 1 or 2 bussers/dishwashers.

If you look in the windows you'll notice the hood fan and about three-quarters of the kitchen equipment sitting in the dining room. The last few days have been spent downtown applying for licenses and permits so we can hopefully meet our goal of opening on January 18th. Inspections and hearings can take a while, so we may end up bumping it back a week or so... we'll just keep plugging away and focus on the things we can do while that process is taking place. The bar is built and looks great- a few coats of clear coat and we'll be ready to go! The winter menu is posted in the window, and I'm just beginning work on the wine list. As my work at my other job winds down I'll be spending more time at the restaurant. Shopped for china and flatware this morning and found some nice plates. Just plain white but they look good and seem sturdy enough. Glassware is next. The bar is being built and should be done next week some time. We're starting to look at paint cards to find the right color for the interior (the exterior will also be painted in the spring when the weather improves).

Moving forward. We've begun the process of shopping for equipment and furniture, finalizing the menu and, maybe most exciting, set a tentative opening date of January 18th. Of course that seems like a long time, but it goes quickly when there's so much to do. In the next week or two, if you're in the neighborhood, you may notice a sign in the window and maybe even a menu and wine list. Please let us know what you think!

As we get closer to opening, the momentum we've gained over the last few weeks continues to carry us forward. We've found a nice location at 3001 S. Kinnickinnic Avenue in Bay View, just a couple of blocks north of Oklahoma Avenue, and are now working toward finishing the build-out and setting up the kitchen. We've also set up the email on this site, and started Facebook ("Pastiche Bistro") and Twitter ("PasticheBistro") accounts. If you'd like to communicate with us, please email to mike@pastichebistro.com and let us know what you think so far. If everything continues to go well, our planned January 2010 opening will be just the thing to shake off the winter blues!
